How to Prepare Corn for the Freezer
This is our DIY for preparing corn for the freezer! We are by no means experts, as this is our first time putting away vegetables. Our good friend supervised this endeavor. We planted two types of corn, and put them away in different fashions. First, we vacuum sealed whole cobs and secondly, we froze small bags of just kernels.
Step One: Pick your Corn!
I luckily missed the first step as they picked while I cut grass. Evan and Marvin went through the garden gathering all the ripe corn cobs and brought them back to the barn.
Step Two: Shuck your Corn
We shucked both types of corn prior to starting the processing. They made a nice shucking station in the barn.
Corn Shucked!
Step Three: Wash your Corn!
After shucking the corn, we washed every cob making sure all of the silks were removed.
The first 2.5 bushels of corn we placed in sets of 3-6 in vacuum sealed bags. Into the freezer they go!
Preparing bags of kernels
The second type of corn received the same shucking and washing as the first. After cleaning and blanching the corn, we set down to dekernel every cob!
The washed corn went into the pot.
We brought it just to a boil.
Then, it took an ice bath to make the corn easier to work with.
Marvin had an official corn dekernerler, but we found sharp knives worked better.
We collected all of the kernels then bagged them into quart sized ziplocks.
After labeling the bags, they joined the first corn cobs in the freezer!
Take Away
From start to finish, our corn processing took a good chunk of our Saturday with time also spent preparing cucumbers and squash for later. I think our first attempt of preparing corn was a success!
